Morbier cheeses are marked by a striated horizontal line of vegetable ash which appears in the center of the cheese. Morbiers are made from raw cow’s milk and those from Europe which are aged more than 30 days are banned from the US because of concerns over Lysteria content resulting from aging non-pasteurized milk. This morbier cheese is made from raw cow’s milk in the US and is aged over 90 days. Delicious with Gewurtztraminer!
